Orange Lime Salsa
This is a great salsa for all you grilled salmon lovers.
The salsa is deceptively complex in flavor. The tart of the lime plays off the sweet of the orange. The citrus as a whole plays off the distinctive heat of the Chipolte peppers.
Ingredients:
- 4 navel oranges
- 1 small red onion - finely chopped
- 1/4 cup lime juice
- 1/4 cup fresh cilantro - cilantro
- 1 tbsp chipotle peppers - minced
- 1 clove garlic - minced
- Salt & freshly ground pepper
- With a sharp knife, remove skin and white pith from oranges and discard
- Working over a medium bowl to catch the juice, cut the orange segments from their surrounding membrane, letting the segments fall into the bowl
- Add onion, lime juice, cilantro, chipotle peppers and garlic - stir to combine
- Add salt and pepper to taste
