
This particular recipe can be served with chips, incorporated into grains/pastas, or use it as a crostini topping on toasted baguette or on speciality crackers.
Like other salsas, key is to get all the ingredients to about the same size.
Ingredients:
- 1 cup chopped tomatoes (2 medium)
- 1/2 cup zucchini
- 1/4 cup green bell pepper
- 1/4 cup sliced ripe olives
- 2 tbsp chopped fresh basil
- 1/4 tsp garlic powder
- 1/8 tsp salt
- Remove seeds and ribs of bell pepper and finely chop
- Finely chop zucchini into uniform pieces
- Combine all ingredients in a large bowl
- Allow at least 30 minutes for flavors to set
